Jon and Nick really liked the Mother’s Day breakfast casserole I made for Fun Food Friday that you can do for your Mom! It’s easy and you can do it ahead of time!
You know how you always have left over tortillas from taco night? (At least, that’s what happens at my house!) This is a yummy dish you can easily do for your Mom. Here’s the recipe: (BTW, please forgive the non-existence of exact measurements. I am my Mother’s daughter and she never really measured anything.)
About 6 or 7 8″ tortillas
A block of Cheese. Any kind. I used smoked cheddar
Deli ham. About 8 slices or so. You can also use leftover baked ham if you like
A 16 oz. can of seasoned chopped tomatoes. Drained!
A container full of Fresh parmesan cheese.
About 7 deli american cheese slices
6 or 7 eggs
1/4 c. milk
Extra virgin olive oil or butter to prep the pan
Salt & pepper
Scramble the eggs, the pour the milk into the eggs, mix and set aside. Prepare the casserole dish (about 9″ x 12″?? but any size will do as long as it’s not too small) with either butter or extra virgin olive oil on the bottom and put a layer of tortillas, then put a layer of ham, then put a layer of the smoked cheddar, then layer tortillas again, ham, the scrambled eggs and milk mixture, the AMERICAN cheese slices, the can of drained chopped tomatoes and top it off with the container of fresh parmesan cheese. Bake for about 35 – 40 minutes until the cheese is melted. Let it sit for about 5 minutes, cut and eat!
