Warm spicy Black bean dip with quinoa, walnuts, red peppers and onions
1 Red Bell Pepper
¾ c. Walnuts
2 Tbs extra virgin olive oil
1 onion
1 16 oz. can black beans drained!
3 cups cooked quinoa (I used the tri-color. Fancy! But the regular quinoa will be fine.)
¼ c. breadcrumbs
Cayenne pepper to taste (optional)
Salt and pepper to taste
Cook the quinoa as directed on the package. While that’s cooking, with a food processor, put the cut pepper and onion and walnuts. Put the black beans in and mince them. Heat the olive oil in a pan and place the minced up ingredients in. Simmer until hot, add cayenne, black pepper and salt, all to taste. Add the quinoa, then the breadcrumbs to the entire mixture until smooth consistency.
Serve warm with Tortilla Chips. I used Santitas, $2 dollars only.
